Date and Nut Cake

Dates, nuts and Squeeze n’ Easy provide a delightful blend of tastes and textures in this recipe.

1 package of chopped dates
1 cup hot water
Mix together and let soak.
½ cup of butter
1 cup grand. Sugar
3 eggs separated
1 ½ cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped nuts (walnuts)
1 teaspoon vanilla

 

Cream butter and sugar until smooth. Add egg yolks one at a time. Beat thoroughly. Sift dry ingredients; add alternately with dates mixed with the water. Add the vanilla and nuts. With the egg whites, mix until fluffy with mixer. Than fold into the batter.

Pour into two 8 or 9 inch round pans and bake at 350 degrees for about 30 minutes or until you test with toothpick or to the touch.
