Buttery Shortbread Cookies


These are sooooo good!!!

2 sticks of butter

2 cups of cake flour

¾ cup confection sugar

½ teaspoon baking powder

½ teaspoon of vanilla or almond or fresh lemon and rind

Combine all ingredients; use hands to knead until blended. I used a mixer first than I mixed by hand till blended. Roll into a log and refrigerate for about 2 hours. Slice and bake 325 degree for about 20 minutes, or until lightly browned.

This also can be frosted with:

1 ½ cups of powder sugar

1 stick of butter softened

2 Tbsp. milk

2 tsp. vanilla

Combine all ingredients on low, than up to high for about 1-2 minutes, add coloring if desire and spread over cookies.
